    I think what you are looking for is the linear viscousity stress tensor.

    When the temperature increases, viscosity decreases and flows faster.
    Ketchup has added calcium so that it flows slower.

    I did find shear strain referring to lava
    There was one other reference to pump engineering where increased temp mae pump flow less due to slippage

    A fluid whose viscosity decreases with increasing shear is said to be “pseudoplastic”.

    A fluid whose viscosity stays the same with increasing shear is said to be “Newtonian”.

    A fluid whose viscosity increases with increasing shear is said to be “dilatant”.
